Crispy fried salmon with sweet soy sauce for 10 persons


  • 10 portions of Atlantic salmon, fillet with skin, boneless, 125g
  • 20 cl sweet soy sauce (Kecap Manis)
  • 2 tbsp dry sherry (or dry white wine)
  • 35 cl of water
  • 1/3 ginger root
  • olive oil
  • fresh chives or coriander for garnish

Instructions / directions

Rub the salmon fillets with some olive oil. Season them on both sides with sea salt and broken pepper. Panfry the salmon until golden brown with the skin facing up. Turn carefully and fry skin until crispy. Turn the fillet over a last time and keep in a warm oven.

Drizzle the pan with flour and add soy sauce, dry sherry and water. Grate the ginger and add the crushed garlic. Stir and reduce until you get a smooth sauce. Season with salt and pepper.

Arrange the fish with the skin upwards and a little sauce next to the fish to avoid breaking the crust. Serve the rest of the sauce separately.

Tip: Serve with baked potatoes, snow peas and a crispy salad. Garnish with fresh herbs.

Tip: Ground garlic can be replaced with garlic powder.
