Pangasius fillet with spinach filled pasta rolls serves 4

Ingredients

  • 4 pangasius fillets
  • 2 tbsp flour
  • 2 tbsp butter
  • 2 tbsp cooking oil
  • Spinach-filled pasta rolls:
  • 4 lasagne sheets (fresh or pre-cooked)
  • 1 onion (peeled and chopped)
  • 200g spinach
  • 2 tbsp pine nuts
  • 2 tbsp butter
  • 200g cheddar cheese (grated)
  • salt and pepper

Instructions / directions

    Make the Spinach-filled pasta rolls first.
     

  1. Fry the onion and spinach slowly in the butter. Add the pine nuts and salt and pepper.
  2. Add one scoop of spinach mixture to each lasagne sheet. Roll up the sheets into rolls and place them on a greased baking dish. Sprinkle the grated cheese on top and bake for about 10 minutes at 175 °C.
  3. While the rolls are cooking, dip the fish in the flour, then fry until golden brown in butter and oil. Serve on top of the roles.
