Papillot of salmon and vegetables for 4 persons
- 4 Atlantic salmon, boneless fillet without skin, 175g
- 6 stems white leek
- 1 carrot
- 1 shallot
- 7 cl fish stock
- 4 branches tarragon
- 4 tablespoons cream
- butter or oil
- pepper and salt
Instructions / directions
Chop the shallot finely and cut the carrot and the leek. Place the vegetables on 4 sheets of aluminium foil or greaseproof paper and coat with oil or butter. Season the salmon with salt and pepper on both sides and place them on top of the vegetables.
Mix the cream and fish stock. Pour the mixture into the papillotes, add a sprig of tarragon and close the foil. Bake for 20 minutes in a preheated oven at 220 ° C. Serve with potatoes or rice.Print
