Salmon cancato with a topping of tomato salsa for 10 persons
- 10 Atlantic Salmon, fillet, skinless, boneless, 125g
- 2 large tomatoes
- 1 salami (in slices)
- 2 cloves of garlic
- 1 bunch chive
- 100 gr grated cheese
- course sea salt
- Herbs de Provence
- black pepper
- olive oil
Instructions / directions
Rub the salmon portions with oil, herbs and spices. Arrange the salmon in a baking tray with the outside of the fish down. Cover with diced tomatoes, salami slices, crushed garlic and grated cheese. Season with herbs and olive oil.
Bake for 10 minutes in a preheated oven at 180°C. Sprinkle with chopped chives and use the juice as sauce. Continue to bake at 70°C.
