Serves 4


  • 4 x 125g salmon fillets (skinless and boneless – cooked and flaked)
  • 500g potatoes (boiled)
  • 25g butter
  • 1 tbsp milk
  • 1 tbsp parsley (chopped)
  • 1 tbsp oil
  • zest of 1 lemon
  • Nutmeg (to taste)
  • parsley (for garnish)
  • salt and pepper

Instructions / directions

  1. Mash the potatoes with a fork. Add the butter, milk, lemon zest, salt, pepper and nutmeg.
  2. Add the salmon and chopped parsley to the mash, mix together then roll into small croquettes.
  3. Panfry the croquettes in oil for 5 minutes until golden brown. Keep warm in a hot oven. Serve with a fresh salad.
