Spanish paella with vannamei shrimp for 4 persons


  • 400 g vannamei shrimp, peeled and defrosted
  • 400 gr seafood mix, defrosted
  • 500 g paella rice
  • 1,5 liter lobster stock
  • 400 g green peas
  • 1 g saffron
  • 4 shallots
  • 6 cherry tomatoes
  • 2 red peppers
  • olive oil
  • lemon
  • salt and pepper

Instructions / directions

Fry the rice, finally chopped shallots and saffron in a little olive oil in a pot. Add the lobster stock. Cook the rice for about 15 minutes. The rice should have a little “core” left when it is ready.

Fry the peppers and diced cherry tomatoes in a separate pan with olive oil. When they soften and turn color into the seafood mix and cook for about 2 minutes. Pour over the mixture with the peas in the pot with the rice and heat for a few more minutes. Serve with aioli and lemon.
