Tilapia fillet with curry sauce, wok vegetables, basmati rice and coriander


  • 15 kg tilapia, fillet, boneless, 140/170g
  • 3 kg red onion
  • 3 kg beansprouts
  • 3 kg carrots
  • 3 kg red peppers
  • 3 kg green peppers
  • 400 ml peanut oil
  • 1 kg white onions
  • 1 kg cooking apples
  • 50 g butter
  • 50 g curry powder
  • 2,5 l fish stock
  • 2,5 l chicken stock
  • 360 g roux
  • 1 l coconut cream
  • 5 kg basmati rice
  • 10 l vegetable stock
  • 1 bunch fresh coriander
  • 100 g sesame seeds
  • salt and pepper

Instructions / directions

Put the tilapia fillets in gastronorm trays with holes and season with pepper and salt. Steam the tilapia fillets for +/- 20 minutes at 75°C. Briefly sauté the vegetables in peanut oil and season with salt and pepper.

Remove the core from the apples and cut in large pieces. Sauté onions and apples and season with curry powder. Drizzle with fish stock and chicken stock and simmer for a short while. Mix the sauce and add the roux. Add the coconut cream and season with salt and pepper.

Pour the rice into a gastronorm tray and add the vegetable stock. Steam for 20 minutes at 100°C and leavefor 10 minutes. Roast the sesame seeds until golden brown.

Place the tilapia fillets on a plate, top with the curry sauce and add the stir-fried vegetables. Serve with rice. Garnish with fresh coriander and roasted sesame seeds.
