Trout stuffed with spinach for 4 persons
- 4 trout, fillet, 160/180g
- 1kg of fresh spinach (or 500g frozen spinach)
- 3 slices of white bread
- 3 tablespoons of chopped parsley
- 4 cloves of garlic
- 1 knob of butter, a dash of olive oil
- Pepper and salt
Instructions / directions
Thaw the 4 trout fillets and season the inside and outside with salt and pepper.
For the filling, boil the spinach in a pan or thaw in a colander. Peel and finely chop the shallots and garlic. Remove the crusts from the slices of bread and cut into pieces. Melt a knob of butter and a dash of olive oil in a frying pan. Stew the shallots, garlic and chopped parsley. Add the bread crumbs and spinach. Season with salt and pepper.
Stuff the filling in the trout fillets, place them in a pan with melted butter and fry over a low heat for 15 minutes so that the trout gets a crispy crust. Place a little chopped parsley in the pan at the last minute. Serve with a pilau rice and oven baked cherry tomatoes.Print
